    Vegetable Beef Soup

    Put chuck steak in a pot and just cover with water. Sprinkle with pepper.
    Bring to boil and then simmer for a few hours until fork tender.

    Remove meat to cutting board. Cut up or shred.
    Strain broth and return to pan (wipe out any foam or fat).

    Add:
    Meat
    1 can of tomatoes
    3 carrots, diced
    4-5 stalks of celery, sliced or diced
    1 medium onion, diced
    3 potatoes, peeled and diced
    1-2 cans beef broth
    Water to cover all
    1 tsp. thyme
    Salt and Pepper to taste


    Cover and heat to boiling. Simmer until vegetables are cooked to desired doneness.

    Notes: Can add 1 cup of barley too!
