    Chocolate Chip Raspberry Bars

    1 3/4 cups flour
    1 cup sugar
    1 cup cold butter, cubed
    1 egg
    1/2 tsp almond extract
    1 cup seedless raspberry jam
    1/2 cup miniature semisweet chocolate chips

    Recipe




    In a large bowl, combine the flour and sugar. Cut in the butter until the
    mixture resembles coarse crumbs. Stir in the egg and the extract just until
    moistened. Set aside 1 cup of the crumb mixture for the topping. Press
    the remaining mixture into a greased 11 x 7 inch baking pan. Bake at 350 F.
    for 5 minutes. Spread with the jam. Sprinkle with the reserved crumb
    mixture. Bake at 35-40 minutes minutes longer or until golden brown.
    Sprinkle with the semisweet chips. Return to the oven for 30 seconds or
    until the chips are glossy. Cool completely on a wire rack. Cut into bars.
    Yield: about 3 dozen
