1 lb white beans
1 quart cold water
1 small onion,sliced
1/2 tbsp. salt
1/2 tsp. prepared mustard
1 tbsp. brown sugar
1/4 cup mild-flavored molasses
1/2 cup ketchup
pinch of pepper
Hot water,as needed
1/4 lb. salt pork or bacon,sliced
Recipe
Soak beans overnight in cold water.Cook in soaking water if you wish,Cover.Heat to boiling,simmer 30 minutes.Drain,keeping liquid.Place onion sliced in the bottom of a 6 cup casserole.Mix seasoning and pour into pot.Add beans and hot liquid or water to cover.Arrange salt pork or bacon sliced on top.Cover and bake in a slow oven (250 deg.) for about 7 hours.Add liquid as needed to keep beans just covered.One hour before serving,remove cover to allow salt pork or bacon to brown.
