    1 medium onion, minced
    1/2 cup finely chopped celery
    1/4 cup butter
    4 tablespoons flour
    1 cup chicken stock
    2 cups cooked pork, finely chopped
    1 cup fine, dry bread crumbs
    2 eggs, beaten
    Oil

    Recipe



    Saute onion and celery in butter; add flour and cook over low heat, stirring until smooth and light brown. Remove from heat and gradually stir in stock and pork. Season to taste. Cool mixture in fridge before shaping into balls. Shape into 1 inch balls and roll in crumbs, then egg, then crumbs again. Deep fry until golden brown. Drain on paper towel. Makes 3 doz.
