1 1/2 cup flour
1 cup oat
1/2 cup firmly packed brown sugar
1/2 cup chopped nuts (optional
1 tbsp. baking powder
1/2 tsp. baking soda
1 cup mashed ripe bananas (about 3 med.)
5 tbsp. margarine,melted
1/2 cup fat free milk
1 eggRecipe
Heat oven to 400 deg..Line twelve med. muffin cups with paper baking cups or used cooking spray.
In large bowl,combine flour,oat,sugar,nuts,baking powder and baking soda;mix well.In med. bowl,combine bananas,margarine,milk,egg;blend well.Add to dry ingredients all at once;stir just until dry ingredients are moistened.
Fill muffin cup almost full .Bake 17 to 19 minutes or until golden brown.Cool muffins in pan.Remove from pan.Serve warm.
