    Select white head with fresh green leaves.Remove leaves and cut off stalk.Soak,head down,for 30 minutes in cold water;drain.Leave whole or break into flowerets.(I break them).Cook in boiling salted water until tender about 10 to 15 minutes for flowerets.Drain and season with salt,pepper and butter.
