    • 8 eggs
    • 2 cups ff sour cream
    • 4 oz ff cheddar
    • 1 green onion, minced
    • 1/4 cup chopped fresh parsley
    • 1 cup frozen corn
    • 1 can black beans, rinsed & drained
    • 1 cup fresh salsa


    Instructions


    1. Preheat oven to 350.
    2. Lightly grease a 9x13 baking dish.
    3. In a large bowl, whisk together the eggs, sour cream, cheese, green onion and parsley.
    4. Mix in the corn and black beans.
    5. Transfer to the baking dish.
    6. Bake 30 min.
    7. Serve with salsa.
