Peanut Butter Cookies

- 2 sticks butter
- 1 cup peanut butter
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 3 cups flour
- 1 teaspoon baking powder
- 1-1/2 teaspoons baking soda
- 1/2 teaspoon salt
Instructions
- Cream together with mixer the butter, peanut butter, sugar and brown sugar.
- In a seperate bowl blend together the flour, baking powder, soda, and salt.
- Add eggs to the peanut butter mixture then combine with the flour mixture.
- Dip cookie dough out with an ice cream scoop drop into your buttered hands and roll, place on a lightly greased cookie sheet-no more than 6 cookies per sheet (2 in each row).
- ***Very important- remember to take a fork and make a criss cross shape on each cookie-this helps the cookie to expand (spread) while baking-if this is not done the cookies will not spread and will be doughy and not cook properly so remember to criss cross.
- Bake in preheated 375 degree oven for 10 to 12 minutes-Do Not Overbake-Cookies will be light in color and continue to bake and set up after removing from the oven. If I use a black metal pan the cookies bake in 10 minutes, if I use a nonstick gray pan the cookies bake in 12 minutes.
