Coconut Ice Cream Pie

- Ritz crackers, crushed
- butter, melted
- 3 packages instant coconut pudding
- 1/2 gallon vanilla ice cream, softened
- 1 cup milk
- non dairy frozen topping, thawed
- coconut, toasted
Instructions
- Mix together the crushed crackers and butter, pat into a pie dish and set aside.
- Mix together pudding, vanilla ice cream and milk. Spread ice cream mixture over pie crust.
- Spread cool whip over top and sprinkle with toasted coconut.
