    3 eggs
    1 c. oil
    2 c. sugar
    3 tsp. vanilla
    2 c. pureed cantaloupe, (approximately 1)
    3 c. flour
    1 tsp. salt
    1 tsp. baking soda
    3/4 tsp. baking powder
    2 tsp. cinnamon
    1/2 tsp. ginger
    1 c. chopped nuts, optional

    Recipe



    Preheat the oven to 325. Grease and flour two 9 x 5 x
    3" bread loaf pans. Sift together
    the flour, salt, baking soda, baking powder, cinnamon
    and ginger. Set aside. Beat
    the eggs. Then add the oil, sugar, and vanilla. Add
    the cantaloupe puree and mix.
    Add the dry ingredients to the wet ingredients. Pour
    into the pans and bake for 1
    hour or until a tester comes out clean
