    A new twist on zucchini bread.

    List of Ingredients




    1 1/2 C. all-purpose flour
    3/4 C. lt. brown sugar
    2 t. baking powder
    1/4 t. salt
    2 eggs, slightly beaten
    1/2 C. veg. oil
    1/2 C. grated carrots
    1 3/4 C. grated zucchini
    1/2 C. golden raisons (opt.)

    Recipe



    Preheat oven to 365' Grease and flour an 8x3" loaf pan.
    In medium bowl,combine the eggs and oil and mix well.
    Sift the dry ingred. into a lrg. bowl.
    Gently stir the egg mixture into the dry ingred.
    Fold the carrots, & zucchini into the above mixture. Pour into the prepared loaf pan and bake for about 55 minutes.
    Remove from oven to wire rack; allow to cool for 5 minutes and then remove from the pan and cool completely on the wire rack.
