    Featherly Light Potato Rolls

    1 (2 oz) pkg instant potato flakes or 1 1/2 cups mashed potatoes
    1 cup milk
    2/3 cups shortening
    1/2 cup sugar
    1 tsp salt
    1 pkg yeast
    1/2 cup warm water (105-115º)
    2 eggs
    7 1/2 cups flour
    melted butter

    Prepare potato flakes according to pkg.
    Scald milk; remove from heat, add shortening, potatoes, sugar, and salt. Stir until shortening melts: cool to lukewarm.
    Dissolve yeast in warm water in large bowl. Let stand 5 minutes. Add milk mixture and eggs, beating well. Gradually beat in 2 cups flour, beat well. Add remaining flour to form a stiff dough, beating well after each addition.
    Turn dough onto lightly floured surface and knead until smooth and elastic. Place in well greased bowl, turning to grease top. Cover and let rise until doubled (1 1/2 hours).
    Punch dough down and shape into 1 1/2 inch balls. Arrange on greased jellyroll pan. cover and let rise in warm place 1 hour or until doubled.
    Bake in a 350º oven for 20-25 minutes or until browned. Brush tops with melted butter.
    Yield: about 8 dozen
