Fresh Apple Pie with Nutmeg Sauce

This is the BEST apple pie I've ever eaten!!!
List of Ingredients
8 C. peeled, sliced tart apples (granny smith)
1/2 C. water
1 1/2 C. sugar
1 t. vanilla
1 - 9" Baked pie shell
1 C. graham cracker crumbs
1/2 C. flour
1/2 C. sugar
1/3 C. butter

Place apples and 1/2 C. water in saucepan. Bring to a boil, reduce heat, cover and simmer 10-12 minutes. Drain.
Stir in the 1 1/2 C. sugar and vanilla and set aside.
In med. bowl, combine; graham cracker crumbs, flour, and 1/2 C. sugar. Cut in the butter till mixture resembles coarse crumbs. Transfer apples to the pre-cooked pie shell, top with the crumb mixture and bake at 375' for 25 minutes.
Cool to warm and serve with nutmeg sauce.
NUTMEG SAUCE;
In saucepan, combine; 1 egg yolk, 1 C. milk, 1/2 C. sugar, and bring to a boil stirring constantly-reduce heat and simmer for 1 minute, then stir in 1/2 t. freshly ground nutmeg.
