    This is great for a summer afternoon or weekend luncheon.
    Garnish with a fresh mint leaf for an attractive presentation.

    1 pkg. Peach jello
    1 - 9" deep dish Pie Crust, baked and cooled
    2/3 C. Boiling water
    1 C. Vanilla ice-cream
    1 C. Fresh Peaches, peeled and diced
    3 1/2 C. Cool Whip, thawed

    Recipe



    Dissolve the jello in the boiling water. Add the ice-cream by spoonfuls and stir untill melted and smooth. Blend in the cool whip and peaches. Spoon into the crust. Chill about 3 hours or freeze untill firm. Makes 8 servings.
