    CASHEW CHICKEN CASSEROLE

    List of Ingredients




    2 1/2 cups cooked chicken, cubed
    2 cups cooked wild rice
    1 cup whole cashews
    1 cup celery, diced
    1/2 cup uncooked long grain rice
    1/4 cup chopped fresh parsley
    3 tbsps. butter, melted
    1 1/2 cups chicken broth
    1/2 cup white wine
    8 ozs. sour cream
    1 tsp. dried basil leaves
    1/2 tsp. salt
    2 tsps. finely chopped fresh garlic

    Preheat oven to 350. In 3 quart casserole or 13 x 9 inch baking pan, stir together all ingredients. Cover and bake, stirring occasionally, for 50-60 minutes or until rice is tender. Uncover and continue baking for 10-15 minutes or until rice has absorbed all the liquid.

    (I mix all the liquid ingredients first and then the herbs and then add the chicken, rice, and cashews.)
