    Fudge Nut Oat Bars

    List of Ingredients




    2 1/2 cups quick-cooking oats (I've used regular and it was fine)
    2 1/4 cups flour
    3/4 cup white sugar
    3/4 cup brown sugar
    1 1/2 cups chopped walnuts, divided
    1 1/2 t. baking soda
    1 t. salt
    12 T cold butter, cut in pieces
    2 eggs
    2 t. vanilla, divided
    1 can (5 oz) evaporated milk
    3 T. butter
    2 T. dark corn syrup (I've used light and it's fine)
    2 1/2 cups chocolate chips

    Recipe



    1. Preheat oven to 350. Grease a 10 X 15 inch pan (I've used a 9 X 13).

    2. Combine oats, flour, sugars, 3/4 cup of the walnuts, baking soda and salt. Cut in the cold butter peices with a pastry cutter or 2 knives until the size of peas. (Don't use a FP - it'll pulverize the oats. You can just use your fingers and smush the dough between them.)

    3. Add eggs and 1 t. of vanilla and mix by hand until mixutre just begins to hold together. Do not overmix.

    4. Press half the dough onto the bottom of the baking pan.

    5. Heat milk, 3 T. of butter, and corn syrup together. When milk boils, turn heat off, add chocolate chips and stir until smooth. Stire in remaining 1 t. of vanilla and 3/4 cup walnuts (I usually omit these nuts).

    6. Smooth chocolate mix over pressed dough; crubmle remaining dough evenly over surface and press it lightly into filling. Bake 20 minutes. Cool, cut and serve.
