    One word; DELICIOUS!!!

    List of Ingredients




    3 Eggs
    2/3 C. canned Pumpkin
    3/4 C. Flour
    2 t. Cinnamon
    1/2 t. Nutmeg
    1 C. Walnuts, chopped
    1 C. Sugar
    1 T. Lemon juice
    1 T. B. Powder
    1 t. gr. ginger
    1/2 t. salt

    FILLING;

    1 C. sifted Powdered Sugar
    4 T. Butter
    2-(3 0z each)
    1 t. Vanilla

    Recipe



    In lrg. mixing bowl; beat eggs for 5 min., then gradually add sugar. Stir in pumpkin and lemon juice.

    In another bowl, sift together; flour, b. powder, all spices and salt. Fold into the pumpkin mixture.

    Grease and flour baking sheet with sides (10x15x1")
    Spread mixture in pan and sprinkle with the nuts.
    Bake at 375' for 15 min. Then turn out on a clean dishtowel that has been sprinkled with powdered sugar. Roll up towel and all -jellyroll fashion and let cool.

    Prepare the filling by beating all the ingredients together with mixer untill smooth and creamy.
    Unroll cooled cake-carefully-don't force.
    Spread the cake evenly with the filling and re-roll WITHOUT the towel this time. Wrap roll in seren or foil wrap.
    Chill for several hours before serving.
    Slice and serve.

    ***It's real pretty if you serve on a glass plate with a paper doily on it***
