    Chicken Tikika Masala

    This is an Indian/Pakistan dish that we really enjoy. I haven't tried this recipe of it yet, but am hoping it's a good one.

    List of Ingredients




    Marinade:
    1 cup plain fat free yoghurt
    2 tablespoons lemon juice
    2 teaspoons ground cumin
    2 teaspoons ground red pepper
    2 teaspoons fresh ground black pepper
    1 teaspoon cinnamon
    salt, to taste
    1 piece gingerroot, minced (1/2-inch long)
    750 g boneless skinless chicken breasts, cut into 1 inch cubes

    Sauce:
    1/4 cup (or less)chicken stock, to sauté chilli & garlic
    2 cloves garlic, minced
    1 jalapeno chili, minced
    2 teaspoons ground coriander
    1 teaspoon ground cumin
    1 teaspoon paprika
    1 teaspoon garam masala
    salt, to taste
    225 g can tomato puree
    1 cup fat free yoghurt
    1/4 cup chopped fresh coriander for garnish

    Recipe



    Marinade:
    Combine yoghurt, lemon juice, cumin, red pepper, black pepper, cinnamon, salt and ginger in a medium bowl or food-safe plastic bag; stir in chicken, marinate in refrigerator 1 hour.

    Sauce:
    Heat stock in a large, deep skillet over medium heat, add garlic and jalapeno; cook 1 minute.

    Stir in coriander, cumin, paprika, garam masala and salt.

    Meanwhile, heat oven to 150 deg.C.

    Remove chicken from refrigerator, disgard marinade.

    Bake chicken, turning occasionally, until cooked through, about 10 minutes.

    Back to sauce; stir in tomato sauce, simmer 15 minutes, stir in yoghurt; simmer until sauce thickens, about 5 minutes.


    ***Serves 4***

    Once chicken is cooked add to sauce, simmer 5 minutes.

    Serve with basmati rice and fresh coriander.
