Recipe Introduction
You will be in heaven inhaling the aromas of sesame seed oil. jalapeno peppers, onions, shrimp and BBQ pork. The amount of curry in the original recipe overpowered all those flavors so I have decreased it. By the second day it tasted twice as good.
List of Ingredients
5 ounces cooked rice stick
1 ounce red bell pepper, julienned
1 ounce jalapeno pepper, minced
1 ounce scallion whites
1 ounce onions, sliced
3 ounces BBQ pork
3 ounces shrimp, 70-90 rock
2 teaspoons curry powder
1/8 teaspoon sesame seed oil
2 ounces scrambled egg
BBQ pork
1/3 cup lite soy sauce
1/4 cup sesame oil
2 tablespoons Worcestershire sauce
1/8 cup packed light brown sugar
3 green onions, chopped
4 cloves garlic, crushed
1 1/2 tablespoons Asian chile paste
1 1/2 teaspoons pepper
1 (2 pound) fat-trimmed pork tenderlo
Recipe
Prepare BBQ pork:
1. Pour into a medium bowl the soy sauce, sesame oil, and Worcestershire sauce. Then whisk in brown sugar, green onions, garlic, chile paste, and pepper. Place the tenderloin in a shallow dish. Pour sauce over tenderloin, turning the meat a few times to coat. Cover dish, and refrigerate at least 8 hours.
2. Preheat oven to 450 degrees F (230 degrees C). Transfer pork with marinade into an aluminum foil-lined baking pan.
3. Roast in a preheated oven 25 to 30 minutes. Remove, and let stand 5 to 10 minutes before carving. Dice portion for noodles and put rest aside for separate use.
Noodles:
1. Soak rice sticks according to package directions. Drain and set aside.
2. Heat oil in wok. Stir fry shrimp; remove and set aside. 3. Cook bell peppers, onion, BBQ pork, and curry in hot oil.
4. Add rice sticks and toss to coat and combine.
5. Create hot spot in wok and scramble eggs. Combine with noodles, add shrimp back. Stir fry quickly and serve.
