    List of Ingredients




    2 C. sliced fresh mushrooms
    1/2 C. thinly sliced green onions
    1 C. uncooked brown basmati rice
    1 1/4 C. water
    1 C. beef consumme-undiluted
    1/4 C. finely chopped pecans-toasted
    1/8 t. pepper

    Recipe



    Coat a saucepan with cooking spray; place over med/high heat until hot. Add mushrooms and onions, saute' 4 minutes. stir in the rice, water, and consumme. Bring to a boil. Cover, reduce heat and simmer 45 minutes or until liquid is absorbed and rice is done.

    Remove from heat; let stand, covered 10 minutes. Stir in the pecans and pepper and fluff with fork.

    Makes 4 servings (1 Cup each) ww pts=4
    OR 8 servings (1/2 Cuo each) ww pts=2
