    WW Crab Cakes

    Recipe Introduction

    Be sure to use a good quality of lump crabmeat.

    List of Ingredients

    1 lb. Lump Crabmeat
    1/2 C. Lt. Mayonaise
    2 Egg Whites, beaten
    2 T. Lemon juice
    1/2 t. Hot sauce
    1/8 t. Cayenne pepper
    2 T. Parsley, fresh

    Recipe

    Spray baking sheet with pam. Set aside. Pick through the crab meat and discard any pieces of cartliage.

    Combine all ingredients and mix well. Form mixture into 4 thick patties, 1/2 C.each and place them on the prepared baking sheet. Cover w/plastic wrap and refridgerate for at least 1 hour.

    To cook; place crab cakes under a broiler until the tops are golden brown OR fry in pam sparayed non-stick skillet.
    Serve immediately.

    Makes 4 servings

    ***You can also add 1/2 t. old bay seasoning, and adjust the hot sauce to your taste.
