Peanut Butter Cookie Dough
1/2 cup butter, softened
3/4 cup sugar
1/3 cup creamy peanut butter
1 egg
1/2 tsp vanilla
1 1/4 cups flour
1/2 tsp baking soda
1/4 tsp salt
1 1/3 cup chopped peanut butter cups
Chocolate Cookie Dough
1/2 cup butter, softened
1/2 cup light brown sugar
1/4 cup sugar
1 egg
1 tsp vanilla
1 cup flour
1/4 cup cocoa
1/2 tsp baking powder
1/8 tsp salt

For the Peanut Butter Cookie Dough
Beat butter, sugar, and peanut butter in large bowl until creamy. Add egg and vanilla, beat well. Stir together flour, baking soda, and salt; add to butter mixture, blending well. Stir in peanut butter cups.
For the Chocolate Cookie Dough
Cream butter and sugars. Add egg and vanilla, beat well. Mix dry ingredients in seperate bowl; add to butter mixture, blending until incorporated.
Cool both cookie doughs in fridge for 15-20 minutes.
Roll a heaping teaspoon of peanut butter cookie dough into a small ball. Set aside. Roll another ball of chocolate cookie dough, then push down to form a disc shape. Place peanut butter cookie dough in the disc and fold up the sides to wrap around the peanut butter cookie dough. Place cookies 1.5" apart. Bake for 10 minutes. Let cool for 5 minutes before removing from cookie sheet.
