    Chicken and Vegetables with Hoisin Sauce

    Recipe Introduction

    This is a tasty Chinese dish. The Hoisin sauce is spicy and combines well with the chicken and vegetables.

    List of Ingredients

    2 lbs Boneless Chicken thighs
    3 Cloves of Garlic Minced
    1 Red Bell Pepper Sliced
    2 Onions Sliced
    3 Stalks of Bok Choy Diced (Bite-Sized)
    1 Carrot Sliced
    1 Stalk of Celery Diced
    1 Can of Water Chestnuts (Halves)
    1 Japanese Eggplant Diced or 1/4 of a Regular Eggplant Diced
    Hoisin Sauce to taste
    2-3 tbsp Cooking Oil

    Recipe

    Sauté chicken and garlic together in 2 tbsp hot oil (medium high heat). Remove cooked chicken from pan, add more oil if needed and add red bell pepper, onions and carrot. After they are partially cooked, add the bok choy, celery, eggplant and water chestnuts. When all these ingredients are almost done, lower the heat level and add the chicken and hoisin sauce. Cook for 2 to 3 minutes, ensuring vegetables are still a little crisp.
