    Recipe Introduction


    You can easily make a satiny cream cheese from yogurt. It is delicious plain or mixed with chopped chives or garlic and stuffed into mushroom caps or cherry tomatoes. Here it's combined with a refreshing cucumber mixture to make a satisfying dip you can scoop up with fresh vegetables.


    List of Ingredients


    • 2 cups fat-free plain yogurt
    • 1 cucumber, grated
    • 1/2 cup fresh lemon juice
    • 2 cloves garlic, minced
    • 1 Tbsp. choped fresh dill


    Instructions


    1. Line a strainer or sieve with a double layer of cheesecloth and place it over a bowl. Spoon in the yogurt and tie the corners of the cheesecloth together. Let it drain in the refrigerator overnight. Do not allow the strainer to touch the liquid. Squeeze the yogurt gently and remove it from the cheesecloth. Discard the liquid or reserve for another use. Use immediately or cover and refrigerate for up to 5 days.
    2. Squeeze the cucumber in a towel to remove the moisture.
    3. In a large bowl, combine the cucumber, yogurt cheese, lemon juice, and garlic. Sprinkle with the dill.
