    Swanson Ultimate Mashed Potatoes

    List of Ingredients


    • 3 1/2 cups Swanson chicken broth (Regular, Natural Goodness or Certified Organic)
    • 5 large potatoes, peeled and cut into 1" pieces
    • 3 slices bacon
    • 1/2 cup light cream
    • 2 tbsp. butter
    • Generous dash ground black pepper
    • 1/2 cup sour cream
    • 1/4 cup chopped fresh chives


    Instructions


    1. Heat broth and potatoes in 3-qt. saucepan over medium-high heat to a boil.
    2. Reduce heat to medium. Cover and cook for 10 min. or until potatoes are tender. Drain, reserving broth.
    3. Cook bacon in 8" skillet over medium-high heat until crisp. Remove and drain on paper towels. Crumble and reserve 2 tbsp.
    4. Mash potatoes with 1/4 cup broth, cream, butter and black pepper. Add additional broth, if needed, until desired consistency.
    5. Stir bacon, sour cream and chives into potatoes. Sprinkle with reserved bacon.
