    Savory Millet and Potato Stew

    List of Ingredients


    • 5 cups vegetable broth
    • 2 tablespoons soy sauce
    • 1 cup uncooked millet
    • 1 teaspoon dried thyme leaves
    • 1/4 to 1/2 teaspoon pepper
    • 1 large onion, chopped (1 cup)
    • 4 cloves garlic, finely chopped
    • 1 cup diced red potatoes
    • 1 package (16 ounces) frozen broccoli, cauliflower and carrots


    Instructions


    1. Heat broth and soy sauce to boiling in Dutch oven. Stir in remaining ingredients except potatoes and frozen vegetables.

    2. Heat to boiling; reduce heat to medium. Cover and cook 20 minutes.

    3. Add potatoes and frozen vegetables. Heat to boiling; reuce heat to medium. Cover and cook 8 to 10 minutes, stirring occasionally, until millet and potatoes are tender.
