Two Cheese Spaghetti Squash

Recipe Introduction
If you haven't tried spaghetti squash before, you're in for a treat. Just microwave, toss, and you have a quick side dish.
List of Ingredients
- 1 spaghetti squash (3 lb.)
- 2 Tbsp. KRAFT 100% Grated Parmesan Cheese
- 1/2 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese
- 2 plum tomatoes, chopped
- 1/4 cup chopped fresh parsley
Instructions
- PIERCE squash several times with a fork or sharp knife to allow steam to escape. Microwave on HIGH for about 10 minutes or until soft, turning over about 5 minutes. Let stand 5 minutes.
- CUT squash in half. Remove and discard seeds. Use a fork to scrape the insides of the squash to form strands. Toss squash strands with cheese, tomatoes, and parsley.
- SPOON squash mixture into microwavable bowl. Microwave on HIGH for 2 minutes to heat through.
Final Comments
Makes 6 servings, about 1/2 cup each.
