Recipe Introduction
I got this whole 12 volume Women's Day Encyclopedia of Cookery in 1966 when a local grocery store were selling each volume monthly. I don't even remember how much I paid for this complete set of books, but I just love them.
List of Ingredients
Filling:
3 pounds cooking apples, like Granny Smith
1/3 cup surgar
1/2 cup water
2 slices of lemon
Pastry:
2 cups sifted all-purpose flour
1 1/3 cups sugar
1 1/2 teaspoons baking powder
2/3 cups butter
2 egg yolksRecipe
Filling:
Peel and slice apples, cook with sugar, water and lemon until tender but not mushy. Drain and cool. Remove lemon slices.
Pastry:
Mix flour, sugar and baking powder. Cut in 1/2 cup butter with pastry blender, or work in with fingers until mixture is crumbly. ( These were the directions in 1966 before the food processor, now I just use the food processer to make the dough, much easier and faster.) I also put in the eggs into the food processer.
Mix in egg yolks. Reserve 1 cup of flour mixture for top. Pat rest of dough into 9 inch springform pan. Fill with apples; sprinkle with reserved topping; dot with 2 tablespoons butter and sprinkle 1 tablespoon sugar over top. Bake in preheated 350 degree oven for 1 hour. Serve warm or cold
