    Our Son, Victor, took us to this wonderful restaurant/deli in San Rafael, named Insalata's. In the deli, they had these flyers of recipes, so I picked one up of the macaroon recipe. These are the best macaroons I have ever
    tasted!!

    List of Ingredients




    1 cup egg whites
    2 cups sugar
    1/2 cup honey
    5 cups shredded coconut, unsweetened
    3/4 cup flour
    1 teaspoon vanilla

    Recipe



    Stir the egg whites, sugar and honey into a saucepan over low heat until warm to the touch.

    Add 5 cups shredded coconut, 3/4 cup flour, 1 teaspoon vanilla and continue stirring over medium heat until mixture starts to dry.

    Scoop out 1 inch balls. Place on parchment-lined sheet pan. Bake about 17 minutes at 350 degree oven.

    To really gild the lily, you could dip the macaroons in melted chocolate.
