    Tropical Afternoon Delight


    List of Ingredients


    • 8 oz. small curd cottage cheese
    • 8 oz. tub cool whip
    • 1/2 cup sugar
    • 1 small jar maraschino cherries - drained well & chopped
    • 8 oz. can crushed pineapple - drained
    • 1 pkg pecan pieces
    • 1 can mandarin oranges - drained


    Instructions


    1. Combine cottage cheese and sugar, beat till blended.
    2. Add cherries and pineapple. (Reserve some cherries for garnish)
    3. Stir in cool whip and pecans. (Reserve some pecans for garnish)
    4. Cut oranges in pieces and add to mixture. (Reserve some orange slices for garnish)
    5. Fill cupcake papers, garnish with cherries, pecans and orange slices. Put in muffin pan and freeze. Do not cover until they are completely frozen.
    6. Thaw approximately 10 minutes before serving.
