GREEN TURTLE SOUP

IT IS A TIMESAVER TO BUY CANNED OR FROZEN TURTLE MEAT BUT
IF YOU FEEL ENERGETIC AND CAN TURN TURTLES YOU CAN PREPARE YOUR OWN.
List of Ingredients
- 1 LB GREEN TURTLE CUT INTO PIECES
- 3 CUPS WATER
- 3 CUPS BEEF STOCK
- 1 BAY LEAF
- 1 SPRIG FRESH THYME
- 2 CLOVES
- 1/4 TEASPOON GROUND ALLSPICE
- JUICE & THINLY SLICED PEEL OF 1/2 LEMON
- A FEW GRAINS OF CAYENNE
- 1/4 TEASPOON FRESHLY GROUND BLACK PEPPER
- 1/2 TEASPOON SALT
- 4 WHOLE CORIANDERS
- 2 TABLESPOONS COOKING OIL
- 2 MEDIUM-SIZED CHOPPED ONIONS
- 1 TABLESPOON FLOUR
- 1 1/2 CUPS FRESH SKINNED SEEDED TOMATOES
- 1 TABLESPOON CHOPPED PARSLEY
- 2 CLOVES MINCED GARLIC
- DRY SHERRY
- 2 CHOPPED HARD-COOKED EGGS (FOR GARNISH)
- LEMON SLICES ( FOR GARNISH)
Instructions
- PLACE THE FIRST 12 INGREDIENTS IN SAUCEPAN AND BRING TO THE BOILING POINT. THE CORIANDER PODS WILL RISE TO THE TOP BY THE END OF COOKING PERIOD AND CAN BE SKIMMED OFF BEFORE SERVING.
- HEAT THE COOKING OIL AND SAUTE THE ONIONS FOR 2 MINUTES.
- STIR IN THE FLOUR AND ADD THE TOMATOES.
- PERMIT THESE INGREDIENTS TO COOK FOR 10 MINUTES. COMBINE THEM WITH THE TURTLE MIXTURE AND ADD THE PARSLEY AND GARLIC.
- SIMMER THE SOUP UNTIL THE MEAT IS TENDER, AT LEAST 2 HOURS. YOU MAY ADD A FEW DROPS OF CARAMEL COLOR.
- ADD TO EACH SERVING 1 TABLESPOON OF SHERRY.
- GARNISH THE SOUP WITH THE CHOPPED HARD-COOKED EGGS AND LEMON SLICES
