OXTAIL SOUP
Recipe Introduction
Serve 6 (or just me!)
List of Ingredients
- 2 1/2 lbs. lean Oxtail jointed
- 1/4 pint dried broad beans, pre-soaked
- 6 pimento seeds
- 1 small onion crushed
- 1 dessert spoon salt
- 3 medium size carrots
- 2 tablespoons dry sherry
- 2 stalks escallion
- 2 sprigs thyme
- 1 whole unbroken Scotch Bonnet Pepper
- 1 clove garlic chopped
Instructions
- In a large saucepan, place Oxtail, carrots, and pre-soaked beans with sufficient water to cover well. Boil until meat and beans are tender. Add garlic and continue boiling for about 20 minutes. Remove from fire and set aside overnight. Skim off all fat, and add sufficient water to make required quantity of soup. Add all seasonings and simmer soup until same has a rich taste. Taste for salt, correct seasoning if necessary add sherry just before serving.
