    CARROT CAKE from a BOX!

    List of Ingredients




    CAKE:

    1 box SPICE cake mix
    ¼ C oil
    1 C carrots, grated
    1 tsp. cinnamon
    3 large eggs
    1 1/3 C root beer soda or gingerale


    ICING:

    8 oz cream cheese
    1/2 tsp. INSTANT coffee powder
    3 tbsp. milk or cream
    1C toasted, chopped pecans
    1 box powdered sugar

    Recipe



    CAKE:

    Mix together & pour into greased & floured 9X13 pan, like Pyrex.
    Bake 30-35 minutes or until tested done, & cool on a rack.


    ICING:

    Mix all ingredients in medium bowl.
    Add more milk a little at a time if need to thin it, & add more powdered sugar if you need to thicken it.
    Spread on cooled cake & ENJOY!

    Another good frosting:


    Buttercup Bake Shop Cream Cheese Icing


    A classic that goes with carrot cake, applesauce layer cake, sour cream spice cake, or any other spicy cake recipe.

    1 lb. (2-8 oz. packages) cream cheese, softened slightly, cut into small pieces
    ½ C (1 stick) unsalted butter, softened slightly, cut into small pieces
    1 ½ tsp.vanilla extract
    5 C sifted confectioners' sugar

    In bowl, on med. speed of electric mixer, beat cream cheese & butter until smooth,
    about 3 minutes.
    Add vanilla extract.
    Gradually add sugar & beat until well incorporated.

    Yield: this yields icing for 1 two or three-layer 9” cake.
