    Microwave Peanut Brittle

    List of Ingredients


    1 C sugar
    ½ C light corn syrup
    ¼ tsp. salt
    1 C Spanish peanuts with skins (or more for Tony J)
    1 tbsp. margarine
    1 tsp. vanilla
    1 tsp. baking soda


    Recipe



    Combine sugar, corn syrup & salt in 2 qt. mixing bowl (I use 8 C Pyrex measuring cup). Stir to mix lightly.
    In another bowl, mix together butter, vanilla & baking soda.

    Microwave on high 4 mins. or until amber in color.
    Stir in peanuts.
    Microwave on high 1 ½ - 2 mins. (the trick is not to burn peanut brittle).
    Add in butter, vanilla & baking soda mixture.
    Mixture will be light & foamy.
    Pour onto cookie sheet lined with parchment paper or foil & spread thin.
    Mixture sets up quickly.


    Hint: Use "Pam" to coat spatula & metal spoon.
    Be sure to have good oven mitts or potholders as this mixture can cause nasty burns
    if gets on fingers. Let stand ½ hr. or until cool & then break into chunks.
    Use flexible cookie sheet lined with either parchment paper (preferred) or foil.


    TRICK TO MAKING IT THIN*

    Tip: The trick to making thin peanut brittle - keep baking sheet(s) warm.
    Keep them in oven at 200o F while waiting to spread peanut brittle mixture.
    This allows you to spread mix 1cm to 2cm thick without it setting up.

    Makes: 1 lb.
