    Kathy's Corn Chowder Soup

    List of Ingredients




    8 slices bacon, diced
    2 onion, chopped
    1/4 C carrots, finely grated
    2 cans cream-style corn
    1 - 2 cans whole corn
    3 cups cubed potatoes
    2 cans cream of potato soup
    5 cups milk
    salt and pepper to taste
    dash chili powder

    2 C sharp cheddar cheese (optional)
    1/4 - 1/2 C potato flakes (if want thicker)

    Recipe



    In large saucepan cook bacon until crisp & set aside.
    In small amount bacon grease, saute onions, salt, pepper & dash of chili powder until tender.
    Add corn, potatoes, soup & milk.
    Raise heat to high & bring to boil.
    Reduce heat to low, cover & simmer 25 - 35 mins. or until potatoes are tender, stirring occasionally.
    If need to make thicker, can add potato flakes at this time.
    Add cheese & bacon in just before serving.
