    Blueberry Lemon Quinoa

    List of Ingredients


    • 2 cups nonfat milk
    • 1/2 tsp salt
    • 1 cup quinoa, rinsed and drained
    • 3 tbl maple syrup
    • 1/2 tsp finely grated lemon zest
    • 1 cup blueberries
    • 1 tbl flaxseed meal


    Instructions


    1. Heat milk with salt over medium hear until warm, about 3 minutes.
    2. Stir in quinoa, reduce hear to med-low and simmer, covered, until liquid is absorbed - 17 to 20 minutes.
    3. Remove from heat and stir in syrup and zest.
    4. Fold in blueberries and flaxseed meal.
