Chilled 'Watermelon'

- 1 5lb baby watermelon
- 1/2 cup sugar
- Red & Green food color
- 1/2 cup light corn syrup
- 1/2 cup fresh lime juice
- 1 pt lemon sorbet
- 2 tbsp semi-sweet chocolate chips
Instructions
- Halve watermelon lengthwise. Scoop out red flesh from both halves, reserve one half of melon. Puree the watermelon flesh in blender with sugar and add a few drops red food color. Transfer to bowl. Stir in corn syrup and lime juice, refrigerate.
- Using small serrated knife, cut out and scrape off whitish rind without breaking through the shell, freeze shell 2 hours.
- Slightly soften lemon sorbet and spoon into bowl, fold in 1-2 drops green food color so that it looks like light green watermelon rind. Spread onto frozen watermelon shell, recreating rind. Freeze 2 hours.
- Pour chilled red watermelon mix into ice cream maker, freeze according to directions; stir in mini chocolate chips. Spread into watermelon shell to fill, packing down o ntop of lemon sorbet as needed. Freeze several hours, if cutting, at least four hours then lie flat on sheet in freezer until serving. If scooping, let stand 5 minutes.
