    Chilled 'Watermelon'

    • 1 5lb baby watermelon
    • 1/2 cup sugar
    • Red & Green food color
    • 1/2 cup light corn syrup
    • 1/2 cup fresh lime juice
    • 1 pt lemon sorbet
    • 2 tbsp semi-sweet chocolate chips


    Instructions


    1. Halve watermelon lengthwise. Scoop out red flesh from both halves, reserve one half of melon. Puree the watermelon flesh in blender with sugar and add a few drops red food color. Transfer to bowl. Stir in corn syrup and lime juice, refrigerate.
    2. Using small serrated knife, cut out and scrape off whitish rind without breaking through the shell, freeze shell 2 hours.
    3. Slightly soften lemon sorbet and spoon into bowl, fold in 1-2 drops green food color so that it looks like light green watermelon rind. Spread onto frozen watermelon shell, recreating rind. Freeze 2 hours.
    4. Pour chilled red watermelon mix into ice cream maker, freeze according to directions; stir in mini chocolate chips. Spread into watermelon shell to fill, packing down o ntop of lemon sorbet as needed. Freeze several hours, if cutting, at least four hours then lie flat on sheet in freezer until serving. If scooping, let stand 5 minutes.
