    List of Ingredients


    • 1cup all-purpose flour
    • 3/4 cup sugar
    • 1/2 cup unsweetened cocoa powder
    • 3/4 tsp baking soda
    • 1/4 tsp baking powder
    • 1/4 tsp salt
    • 3/4 cup buttermilk
    • 1/3 veg oil
    • 1 large egg
    • MARSHMELLOW TOPPING
    • 1 envelope unflavored gelatin
    • 3 tsp egg white powder
    • 3/4 cup sugar
    • 2 cups sweetened coconut flakes
    • Red food color


    Instructions


    1. Heat oven 350. Grease and flour eight 8-oz ovenproof glass bowls or round ramekins.
    2. Combine flour, sugar, cocoa, baking soda, baking powder and salt in med-sized bowl. Whisk to blend. In another bowl, combine buttermilk, oil and egg.
    3. add buttermilk mix to the flour mix. Mix until just blended. Evenly divide batter among prepared bowls, 1/4 cup each. Place in oven on baking sheet. Bake at 350 degrees 18-22 minutes. Transfer to a wire rack, cool 10 minutes, invert and cool completely.
    4. TOPPING; sprinkle gelatin over 2 tbsp cool water, stand 5 minutes.
    5. Combine egg white powder and 1/2 cup warm water in large bowl. Whisk to blend, beat mix with electric mixer on high until foamy. Gradually add sugar, 1 tbsp at a time, and beat until thick and glossy.
    6. Heat gelatin mix in microwave until dissolved about 15-20 seconds. Pour into whipped egg whites and stir to combine.
    7. Place coconut in small bowl, tint pink if desired. Spread in even layer of frosting over round cakes, press coconut into frosting to cover.
