    Thai Tofu Stir-Fry

    List of Ingredients


    • 14 oz extra firm tofu, cut in 1-in pieces
    • 2 tbsp cornstarch
    • 3 cups broccoli florets
    • 1 cup sliced muchrooms
    • 1 cup shredded carrots
    • 14oz coconut milk
    • 2 tbsp brown sugar
    • 1 tbsp red curry paste


    Instructions


    1. Put tofu and cornstarch in plastic bag and shake to coat. Put a little veg oil in skillet and cook 3-5 minutes over med-high heat. Remove to plate.
    2. Add more oil to skillet and add veggies, stir fry 3-5 minutes until crisp-tender.
    3. Mix coconut milk, sugar and curry paste to make sauce. Add to skillet and combine. Return tofu to skillet and toss to combine. Serve with rice.
