Thai Tofu Stir-Fry

List of Ingredients
- 14 oz extra firm tofu, cut in 1-in pieces
- 2 tbsp cornstarch
- 3 cups broccoli florets
- 1 cup sliced muchrooms
- 1 cup shredded carrots
- 14oz coconut milk
- 2 tbsp brown sugar
- 1 tbsp red curry paste
Instructions
- Put tofu and cornstarch in plastic bag and shake to coat. Put a little veg oil in skillet and cook 3-5 minutes over med-high heat. Remove to plate.
- Add more oil to skillet and add veggies, stir fry 3-5 minutes until crisp-tender.
- Mix coconut milk, sugar and curry paste to make sauce. Add to skillet and combine. Return tofu to skillet and toss to combine. Serve with rice.
