    List of Ingredients


    • 3 Tbsp Cinnamon Chipotle Rub (McCormick)
    • 2 tsp grated lime zest
    • 1 tsp ground cumin
    • 1 whole salmon fillet (about 2 1/2 lbs)
    • 3/4 cup (6 oz) pineapple or orange juice
    • 2 Tbsp lime juice
    • Garnish with pineapple and lime slices and fresh pineapple leaves


    Instructions


    1. Mix rub, zest & cumin in a small bowl.
    2. Put salmon in a large glass baking dish or zip top bag. Add juices, cover and seal. Marinate 15 minutes at room temperature.
    3. Heat oven to 450. line a baking sheet with foil. Place salmon, skin side down on the foil, discard the marinade. Evenly sprinkle the spice mixture over the salmon.
    4. Bake 15-20 minutes until opaque at the thickest part. Lift with 2 large spatulas to a serving platter, leaving the skin behind.
