    FISH

    600g piece sashimi-grade tuna loin
    1 Tbsp. olive oil
    6 garlic cloves, thinly sliced
    1/4 cup whole coriander leaves

    DRESSING

    1/4 cup (60ml) soy sauce
    1 Tbsp. each mirin and sake
    2 Tbsp. lemon juice
    1 Tbsp. finely grated ginger
    2 garlic cloves, finely chopped
    1 Tbsp. finely chopped coriander leaves

    Recipe



    1. Cut tuna into 4cm-wide logs, then rub with oil.

    2. Heat a heavy fry pan over high heat. When hot, cook the tuna for 2-3 minutes, turning until sealed on all side but rare in the center.

    3. Refresh in iced water, then pat dry with paper towels and slice 1cm thick.

    4. Top each slice with a garlic slices and a sprig or coriander.

    5. Mix dressing ingredients gently, serve with Yellowfin.
