Blueberry Melon Salad with Thyme Syrup

List of Ingredients
- 1 cup sugar
- 1/4 cup water
- Peel and juice from 1
- 4 large sprigs freash thyme
- SALAD
- 3 cups each diced canteloupe, honeydew melon and seedless watermelon
- 1 pt blueberres
- GARNISH
- Lemon
- Thyme
Instructions
- THYME SYRUP: Bring all ingredients to a boil in a small saucepan; simmer for 5 minutes. Remove from heat; let steep 20 minutes. Cool at room temperature or store in the fridge for 1 week.
- Just before serving, gently toss cut fruit in a serving bowl, add 1/2 cup of the syrup and toss. Spoon into dessert bowls and garnish with thyme.
