    Blueberry Melon Salad with Thyme Syrup

    List of Ingredients


    • 1 cup sugar
    • 1/4 cup water
    • Peel and juice from 1
    • 4 large sprigs freash thyme
    • SALAD
    • 3 cups each diced canteloupe, honeydew melon and seedless watermelon
    • 1 pt blueberres
    • GARNISH
    • Lemon
    • Thyme


    Instructions


    1. THYME SYRUP: Bring all ingredients to a boil in a small saucepan; simmer for 5 minutes. Remove from heat; let steep 20 minutes. Cool at room temperature or store in the fridge for 1 week.
    2. Just before serving, gently toss cut fruit in a serving bowl, add 1/2 cup of the syrup and toss. Spoon into dessert bowls and garnish with thyme.
