Beef Stroganoff

List of Ingredients
- 1 (12-oz_ pkg egg noodles
- 1/2 stick ubtter
- 6 oz fresh mushrooms, sliced
- 1 medium onion, chopped
- 1 1/4 tsp salt
- 2 lb flat iron streak, cut across grain into 1/8-in thick slices
- 1/4 cup flour
- 2 cups beef broth
- 1 cup sour cream
- 1/8 tsp black pepper
- 1/2 cup chopped parsley
Instructions
- Cook noodles according to package.
- Melt 2 tbl butter in large skillet over med heat. Cook mushrooms, onion, and 1/4 tsp salt, stirring occasionally until vegetables are tender and excess liquid evaporates, 6-8 minutes. Transfer to bowl.
- Cook steak in remaining butter and salt in skillet over med heat until browned, about 7 minutes. Add flour and cook, stirring, 2 minutes. Add mushroom mix and broth and simmer, stirring until thickened 2-3 minutes. Remove from heat.
- Stir in sour cream and pepper and cook low heat until hot but not boiling, 1-2 minutes. Serve over noodles.
