Seared Skirt Steak w/ Mushroom Salad

- 3 tbllemonjuice
- 4 tbl EVOO
- 8-oz sliced mushroom
- 1/2 Cup shredded Jarlsberg/Swiss
- 1/2 Cup flat leaf parsley
- 1 1/4 lb. skirt steak
- Salt & Pepper
Instructions
- Combinelemon juice, 3 tbl. oil, 1/2 tsp. salt and 1/4 tsp pepper.
- Add mushrooms, cheese & parsley, toss to combine.
- Cut steak tppieces, seasonwithsalt and pepper. Heat oil in skillet over med-high heat.
- Cook the steak to desired doneness. 4-5 min for med-rare.
- Serve with mushroom salad.
