    List of Ingredients


    • 1 cup sauerkraut, squeezed dry
    • 2 baking potatoes, peeled, grated and squeezed dry
    • 8 slices bacon, cooked and crumbled
    • 2 tes caraway seeds
    • Salt & Pepper
    • 4 large eggs
    • 1 cup heavy cream
    • 9-in pie shell


    Instructions


    1. Preheat oven to 375.
    2. In a large bowl combine sauerkraut, potato, salt, pepper, caraway seeds and bacon.
    3. in small bowl, beat together the eggs and cream. Stir into the potato mixture. Pour the mix into the pie shell; transfer to baking pan and bake for 35 minutes until the edge brown.


    Final Comments


    Serve warm or at room temp.
