Fettuccine w/ Prosciutto & Peas

List of Ingredients
- 2 Tbl EVOO
- 2 shallots, minced
- 1 tsp minced garlic
- 1 cup heavy cream
- S&P
- 1/4 lb Proscuitto, julienned
- 1 cup frozen peas, thawed
- 1/2 cup fresh grated Parmigiano
- 1 lb fresh fetuccine
Instructions
- Heat oil in large skillet. Add shallots and garlic and saute for a couple of minutes or until tender.
- Add cream and cook for 1-2 minutes. Season with S&P to taste. Add prosciutto and peas and toss gently to combine. Sprinkle with cheese and stir to meal. Cook until heated through.
- In large pot of boiling salted water, add fettuccine, cook al dente. Drain, reserve 1/4 cup water. Add reserved water and drained fettuccine to skillet. Toss to combine and season with salt and pepper.
