    Fettuccine w/ Prosciutto & Peas

    List of Ingredients


    • 2 Tbl EVOO
    • 2 shallots, minced
    • 1 tsp minced garlic
    • 1 cup heavy cream
    • S&P
    • 1/4 lb Proscuitto, julienned
    • 1 cup frozen peas, thawed
    • 1/2 cup fresh grated Parmigiano
    • 1 lb fresh fetuccine


    Instructions


    1. Heat oil in large skillet. Add shallots and garlic and saute for a couple of minutes or until tender.
    2. Add cream and cook for 1-2 minutes. Season with S&P to taste. Add prosciutto and peas and toss gently to combine. Sprinkle with cheese and stir to meal. Cook until heated through.
    3. In large pot of boiling salted water, add fettuccine, cook al dente. Drain, reserve 1/4 cup water. Add reserved water and drained fettuccine to skillet. Toss to combine and season with salt and pepper.
