Tortellini with Peas & Tarragon

List of Ingredients
- 1 lb frozen cheese tortellini
- 2 tbl olive oil
- 1 monion, chopped
- 3 tbl unsalted butter
- 2 cloves garlic, chopped finely
- 1 1/2 cups frozen peas
- Salt & Pepper
- 2 tbl chopped fresh taragon
- 1/2 cup grated Parmesan
Instructions
- Cook the tortellini according to the package directions. Meanwhile, heat the oil in a large skillet over medium heat.
- Add the onion and cook until soft, about 6 minutes. Increase the heat to med-high.
- Add the butter and cook until it turns golden brown, about 3 minutes.
- Stir in the garlic, peas, 1/2 tsp. salt and 1/4 tsp pepper and cook until heated through.
- Add the tortellini, tarragon and half of the cheese, Toss.
- Divide and sprinkle with cheese.
