    Tortellini with Peas & Tarragon

    List of Ingredients


    • 1 lb frozen cheese tortellini
    • 2 tbl olive oil
    • 1 monion, chopped
    • 3 tbl unsalted butter
    • 2 cloves garlic, chopped finely
    • 1 1/2 cups frozen peas
    • Salt & Pepper
    • 2 tbl chopped fresh taragon
    • 1/2 cup grated Parmesan


    Instructions


    1. Cook the tortellini according to the package directions. Meanwhile, heat the oil in a large skillet over medium heat.
    2. Add the onion and cook until soft, about 6 minutes. Increase the heat to med-high.
    3. Add the butter and cook until it turns golden brown, about 3 minutes.
    4. Stir in the garlic, peas, 1/2 tsp. salt and 1/4 tsp pepper and cook until heated through.
    5. Add the tortellini, tarragon and half of the cheese, Toss.
    6. Divide and sprinkle with cheese.
