    Jerk Chicken w/ Rice, Beans & Pineapple

    List of Ingredients


    • 1 cup long grain white rice
    • 1/4 cup cider vinegar
    • 1/4 cup spiced rum or OJ
    • 2 tbl jerk sauce
    • 1 tbl grated fresh ginger
    • 4 6-oz boneless, skinless chicken breast
    • Salt & Pepper
    • 1 tbl. olive oil
    • 1 15-oz can black beans, drained and rinsed
    • 8 oz fresh pineapple, cut into 1-in pieces
    • 1 bunch scallions, sliced


    Instructions


    1. Cook the rise according to the directions.
    2. Combine the vinegar, run, jerk sauce and ginger in a measuring cup or small bowl; set aside.
    3. Pound chicken to an even thickness. Season with salt and pepper.
    4. Heat the oil in a skillet over medium heat. Add the chicken and cook until browned, about 4 minutes per side. Remove from the heat and add the vinegar mix. Return to the skillet to low heat and simmer until the chicken is cooked through, about 2 minutes.
    5. Divide the chicken and sauce among the plates.
    6. Stir the beans into the rice. In a med. bowl, combine the pineapple and scallions. Serve both with the chicken.
