    Roast Lemon-Herb Chicken

    List of Ingredients


    • 2 tsp Italian seasoning
    • 1 tsp garlic powder
    • 1 tsp seasoning salt
    • 1/2 tsp mustard powder
    • 1/2 tsp black pepper
    • 1 4-lb whole chicken
    • 6 tbl lemon juice
    • 1 tbl oil
    • 1/3 cup water


    Instructions


    1. Preheat oven to 350 degrees
    2. Mix together dry seasonings. Pat chicken dry inside and out. Place chicken breast side up in a 9x13 baking dish and sprinkle 1 1/2 tsp of mixture into cavity.
    3. Stir juice and oil in bowl. Drizzle evenly over chicken and sprinkle remaining seasoning mix.
    4. Pour water into dish.
    5. Roast chicken, basting several times with pan juices and adding more water if juices begin to burn. About 1 1/2 hours.
    6. Transfer chicken platter and let rest 20 minutes.
