    Chunky Potato Soup

    List of Ingredients


    • 1 lb potatoes,peeled andcubed
    • 2 cups water
    • 1 small onion,chopped
    • 3 tbsp butter
    • 3 tbsp flour
    • 1/2 tsp black pepper
    • 1/4 tsp red pepper flakes
    • 3 cups milk
    • 1 cup shredded cheddar cheese
    • 1 cup chopped, cooked ham


    Instructions


    1. In large saucepan combine potatoes and water. Bring to a boil, reduceheat.Simmer,covered 10-15 minutes or until potatoes are tender. Drain, reserve 1 cup liquid.
    2. In same pan cook onion un butter until tender, stirringoften. Stir in flour, black pepper and red pepper flakes. Cook over low-med heat 1 minute.
    3. Gradually stir in milk and reserved liquid. Cook and stir over medium until boiling.
    4. Stir in potatoes,cheese and ham. Cook and stir over low heat until heated through and cheese melts.
